The science and politics behind the panic over ultraprocessed foods
The very definition of ultraprocessed is highly contested. The science and politics surrounding ultraprocessed foods, which have been linked to multiple chronic diseases, are considered poison by some public health experts and some public officials. However, the definition of ultraprocesses is highly contested. While advocates argue that ultraprocessing is dangerous to public health, skeptics argue that some ultraprocessions can be part of a healthy diet. Brazilian epidemiologist Carlos Monteiro coined the term “ultraprocessing” in 2009, a four-category system that defines a food based on its level of processing. These categories include unprocessed or minimally processed plant or animal foods, processed culinary ingredients, industrially manufactured food products that can't be made at home, and processed foods made using traditional methods. The majority of research has found correlations between ultraprocessing foods and developing health problems, including heart disease and stroke. However it appears that certain categories of ultraprocessing foods have been identified.
